Preparing an Excellent Tea

The taste of green tea is influenced by the following factors: quality of the water, water temperature, time of infusion and quality of the tea. That's why we offer some recommendations and guidelines.

For the amount of tea, there are no strict rules: generally, we advise one teaspoon per cup but you may also measure out according to your taste. Concerning water, it should be contain no lime or chlorine: neutral and pure spring water are the best.

The water temperature : water must be boiled in order to reduce residues and then be cooled down until the ideal temperature for the specific tea. The better the tea, the lower the temperature of the water. For the best KEIKO teas, a temperature between 55°C and 65°C is recommended.

Time of infusion : a tea with of excellent quality might be infused several consecutive times. According to the quality of the tea, the first infusion may be longer than subsequent infusions. The first teas picking must be infused for 60 seconds, for Bancha around 30 seconds. 15 seconds for subsequent infusions. After every infusion, the teapot must be emptied of water until the last drop to prevent a further infusion of the tea leaves and to preserve their quality. It is very important that the tea be prepared just before its consumption.

Storage : to ensure that KEIKO teas keep fresh even after they have been opened, the package should be emptied of air and closed with a clip. The teas should be kept in a cool place. The bags should be consummed in 4 to 6 weeks after being opened.
